  • 2 cups Bread flour
  • Oil for deep-fat frying
  • 1 cup Mayonnaise
  • 1 tablespoon Ketchup
  • 1 teaspoon Prepared horseradish
  • 1 teaspoon Hot pepper sauce

Instructions

  1. In a large bowl, mix the beaten egg, chopped crawfish, green onions, melted butter, salt, and cayenne pepper. Stir well before gradually adding bread flour until blended.
  2. In an electric skillet or deep fryer, heat about 1 inch of oil to 375°F.
  3. Carefully drop the batter by tablespoonfuls into the hot oil, frying until golden brown on both sides, about 3-4 minutes.
  4. In a small bowl, combine mayonnaise, ketchup, horseradish (if using), and hot pepper sauce. Mix until well combined.
