Description

These Cranberry Orange Muffins are a delightful blend of tart cranberries and bright orange zest, baked to golden perfection.


Ingredients

  • ½ cup granulated sugar
  • 1 cup roughly chopped fresh cranberries
  • 2 ¼ cups all-purpose flour
  • ¼ cup light brown sugar
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup orange juice
  • ¾ cup buttermilk
  • 6 tablespoons vegetable oil
  • Coarse sugar for topping

Instructions

  1. Preheat your oven to 425°F (220°C). Line a standard 12-cup muffin tin with paper liners or spray the cups well with nonstick cooking spray.
  2. In a small bowl, combine the orange zest with granulated sugar. Rub them together until the sugar becomes moist and fragrant. Stir in the roughly chopped fresh cranberries and set this mixture aside.
  3. In a large bowl, whisk together the all-purpose flour, brown sugar, baking soda, and salt. In a separate bowl, beat the egg, then add orange juice, buttermilk, and vegetable oil. Mix until combined.
  4. Create a small well in the center of the dry ingredients, pour in the wet ingredients, and gently stir until just combined. Fold in the cranberry and sugar mixture carefully.
  5. Using a large 3-tablespoon cookie scoop or spoon, evenly divide the batter among the prepared muffin cups. Sprinkle the tops generously with coarse sugar.
  6. Place the muffin tin in the oven and bake at 425°F for 10 minutes. Reduce the oven temperature to 350°F and continue baking for another 6 to 7 minutes.
  7. Remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely or serve warm.
