- 1 1/3 cups confectioners’ sugar
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1/2 – 1 tbsp milk
Instructions
- Prepare the piping bag: Gather a large piping bag fitted with a round tip and set aside. Line two baking sheets with parchment paper or a silicone mat.
- Sift the dry ingredients: Sift the powdered sugar and almond flour together into a bowl, ensuring a smooth texture.
- Whisk the egg whites: In a mixing bowl, whisk the sugar and egg white powder, then add egg whites. Whisk until frothy.
- Beat to stiff peaks: Whisk on low speed for 30 seconds, then medium until white and fluffy, then on high until stiff peaks form.
- Combine ingredients: Gently fold in sifted powdered sugar and almond flour. If using, add food coloring.
- Pipe the shells: Transfer the batter to your piping bag and pipe circular dots onto prepared baking sheets.
- Prepare for baking: Bang the trays to release air bubbles. Let the shells sit for 20-40 minutes until dry.
- Preheat the oven: While waiting, preheat the oven to 300ºF.
- Bake the macarons: Bake one tray at a time for 15-20 minutes until firm.
- Cool the shells: Let the macarons cool completely on the baking sheets.
- Make the cranberry sauce: Cook cranberries, granulated sugar, and orange juice over medium-low heat for 10-15 minutes.
- Prepare the buttercream: Cream softened butter, then gradually add confectioners’ sugar and orange zest.
- Add flavoring: Mix in vanilla or orange extract and adjust buttercream consistency if needed.
- Assemble the macarons: Pipe buttercream on the edge of a shell, add cranberry sauce, and top with another shell.
- Mature the macarons: Refrigerate assembled macarons for one day before enjoying them.
