This Cowboy Butter Prime Rib recipe combines a rich, herbaceous butter blend with a perfectly roasted prime rib for a flavorful and impressive main dish.

- 1 cup (2 sticks / 227 g) unsalted butter, softened
- 2 tablespoons coarse Dijon Mustard
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 4 teaspoons fresh thyme
- 4 teaspoons garlic, minced
- 2 teaspoons lemon juice
- 1 teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- ¼ teaspoon cayenne pepper
- ¼ teaspoon crushed red pepper flakes
- 1 boneless prime rib roast, 6-7 pounds
Instructions
- In a medium bowl, combine the softened butter, Dijon mustard, chopped chives, parsley, thyme, minced garlic, lemon juice, paprika, kosher salt, pepper, cayenne pepper, and crushed red pepper flakes. Mix well until all ingredients are fully incorporated.
- Set aside ⅓ cup of the prepared cowboy butter to serve alongside the prime rib later.
- Remove the prime rib roast from the refrigerator and allow it to sit uncovered at room temperature for 2 hours.
- If your roast is uneven in shape, use kitchen twine to tie it at intervals of about 2 inches.
- Set your oven to 500°F and position the rack in the lower third.
- Place a roasting rack inside a large roasting pan. Position the prime rib on the rack.
- Pat the roast dry using paper towels. Generously rub the entire surface of the roast with the prepared cowboy butter.
- Roast the prime rib at 500°F for 15 minutes.
- Reduce the temperature to 325°F without opening the oven door.
- Continue roasting for approximately 13 to 15 minutes per pound.
- Begin checking the internal temperature 30 to 40 minutes before you expect it to be done.
- Once your target temperature is reached, carefully take the roast out of the oven.
- Tent the roast loosely with aluminum foil and let it rest for 30 minutes.
- Slice the prime rib against the grain and serve alongside the reserved cowboy butter.
