- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon dark rum
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups sweetened shredded coconut, plus more for topping
Instructions
- Preheat the oven to 350°F. Grease an 8×8-inch baking pan.
- In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the rum and vanilla.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the 1 1/2 cups of shredded coconut.
- Spread the batter evenly into the prepared baking pan. Sprinkle the top with additional shredded coconut.
- Bake for 25-30 minutes, until the center is set. Allow to cool completely before cutting into squares.
- Dust the tops with powdered sugar before serving, if desired.
