Ingredients

  • 1 cup Granulated sugar
  • 1/2 teaspoon Salt
  • 2 1/4 teaspoons Instant yeast
  • 1/2 cup Milk
  • 1/2 cup Unsalted butter
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup Butter
  • 1/4 cup Grated cheese
  • 1/4 cup Sugar

Instructions

  1. Prepare your ingredients by gathering all of them and ensuring they’re easily accessible.
  2. Combine the warm milk with instant yeast and 1 tablespoon of sugar in a small bowl. Let it sit for about 5-10 minutes until frothy.
  3. Mix the dry ingredients by whisking flour, remaining sugar, and salt in a large bowl.
  4. Beat the eggs in another bowl, then combine them with softened butter and vanilla extract.
  5. Add the yeast mixture and wet ingredients to the flour mixture. Stir until a soft dough forms.
  6. Knead the dough on a floured surface for about 8-10 minutes until it feels smooth and elastic.
  7. Place the kneaded dough in a greased bowl, cover with a towel, and let rise for about 1 hour.
  8. Punch down the risen dough gently to release excess air, divide it into equal portions, and roll each into a circle.
  9. Fold each circle in half and roll it up to create the iconic spiral shape.
  10. Cover the shaped dough and let it rise again for another 30-45 minutes.
  11. Preheat your oven to 350°F (175°C) while the dough rises.
  12. Bake the dough in the preheated oven for 20-25 minutes until golden brown.
  13. Cool the baked ensaymada in the molds for about 10 minutes before transferring to a wire rack.
  14. Brush each piece with melted butter and sprinkle with grated cheese and sugar while still warm.
