Ingredients

- 4 cups All-purpose flour
- 1 cup Granulated sugar

- 2 1/4 teaspoons Instant yeast
- 1/2 cup Milk
- 1/2 cup Unsalted butter
- 3 large Eggs

- 1/4 cup Butter
- 1/4 cup Grated cheese
- 1/4 cup Sugar
Instructions
- Prepare your ingredients by gathering all of them and ensuring they’re easily accessible.
- Combine the warm milk with instant yeast and 1 tablespoon of sugar in a small bowl. Let it sit for about 5-10 minutes until frothy.
- Mix the dry ingredients by whisking flour, remaining sugar, and salt in a large bowl.
- Beat the eggs in another bowl, then combine them with softened butter and vanilla extract.
- Add the yeast mixture and wet ingredients to the flour mixture. Stir until a soft dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until it feels smooth and elastic.
- Place the kneaded dough in a greased bowl, cover with a towel, and let rise for about 1 hour.
- Punch down the risen dough gently to release excess air, divide it into equal portions, and roll each into a circle.
- Fold each circle in half and roll it up to create the iconic spiral shape.
- Cover the shaped dough and let it rise again for another 30-45 minutes.
- Preheat your oven to 350°F (175°C) while the dough rises.
- Bake the dough in the preheated oven for 20-25 minutes until golden brown.
- Cool the baked ensaymada in the molds for about 10 minutes before transferring to a wire rack.
- Brush each piece with melted butter and sprinkle with grated cheese and sugar while still warm.
