- 1 1/2 cups Graham cracker crumbs
- 1/4 cup Granulated sugar
- 1/2 cup Unsalted butter (melted)
- 24 oz Full fat cream cheese (room temperature)
- 1 cup Granulated sugar
- 1/2 cup Plain yogurt or sour cream (room temperature)
- 1/4 cup All-purpose flour
- 1 tsp Salt
- 1 tsp Pure vanilla extract
- 4 large Large eggs (room temperature)
Instructions
- Prepare the oven by positioning racks and preheating to 325°F (160°C). Line the base of a 9″ springform pan with parchment paper.
- Make the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into the springform pan and bake for 8 minutes.
- Set up a water bath by placing a large baking pan in the oven with boiling water.
- Mix cream cheese and sugar in a large bowl until smooth. Add yogurt/sour cream, flour, salt, and vanilla, mixing gently.
- Incorporate eggs one at a time, mixing well after each addition. Pour the filling over the cooled crust.
- Bake cheesecake in the water bath for 60 to 70 minutes until slightly puffed and lightly browned.
- Cool gradually by turning off the oven and cracking the door for 1 hour.
- Chill in the fridge for at least 5 hours before serving.
