Ingredients

  • 40 saltine crackers (about one sleeve)
  • 1 cup butter (salted or unsalted)
  • 1 cup brown sugar (light or dark)
  • 1 tsp vanilla extract
  • 2 cups milk chocolate chips (or preferred chocolate)
  • 1 cup chopped pecans or walnuts or M&M’s

Instructions

  1. Preheat the oven to 350°F (175°C). Line a large baking sheet with aluminum foil and spray the foil with nonstick cooking spray. Arrange the saltine crackers in a single side-by-side layer to cover the sheet evenly. Set aside.
  2. In a medium saucepan over medium heat, combine butter and brown sugar. Stir continuously with a wooden spoon until the butter is fully melted and the mixture starts to bubble. Continue stirring constantly and cook for 3 minutes to properly cook the caramel. Remove from heat and stir in the vanilla extract.
  3. Evenly pour the caramel mixture over the saltine crackers. Use the wooden spoon or a knife to gently spread and coat all the crackers with the caramel.
  4. Place the baking sheet in the preheated oven and bake for 6 minutes. Remove from the oven immediately and sprinkle the chocolate chips over the hot caramel layer. Let the chocolate sit for 3-4 minutes to melt, then spread it evenly across the caramel with a spatula or knife.
  5. While the chocolate is still soft, sprinkle chopped pecans, walnuts, M&M’s, or Christmas sprinkles evenly over the top. Allow the candy to set at room temperature for 1-2 hours or speed up the process by chilling it in the refrigerator or freezer. Once set, slice into pieces and enjoy!
