- 4 ripe bananas (overly ripe, mashed)
- 1/4 cup coconut oil (melted)
- 1/4 cup maple syrup (pure)
- 2 eggs
- 2 teaspoons vanilla extract
- 1.5 cups whole wheat pastry flour (or all-purpose flour)
- 1.5 teaspoons baking soda
- 1/2 teaspoon kosher salt
- 1 cup chocolate chunks (semi-sweet or dark)
- 1 stick butter (whipped)
- 2 tablespoons maple syrup
Instructions
- In a shallow bowl, combine the cinnamon, ginger, cardamom, nutmeg, all-spice, cloves, and pepper to prepare the spice blend.
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch bread pan.
- In a large bowl, mix the mashed bananas, melted coconut oil, maple syrup, eggs, and vanilla extract until well combined.
- Fold in the whole wheat pastry flour, baking soda, 1-2 tablespoons of chai spice blend, and kosher salt before adding the chocolate chunks.
- Pour the batter into the prepared bread pan and bake for 50-60 minutes, until a toothpick comes out clean.
- In a small bowl, whip together butter and maple syrup for the glaze.
- Spread the maple butter on warm slices before serving.
