- 2 cups mixed diced vegetables (such as bell peppers, zucchini, and onions)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 sheet of puff pastry, thawed
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the diced vegetables, cheddar cheese, Parmesan cheese, parsley, oregano, garlic powder, and salt. Mix well until evenly distributed.
- Unfold the puff pastry sheet and roll it out into a 12×16-inch rectangle.
- Spread the vegetable and cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides.
- Carefully roll up the puff pastry, starting from the short side, to create a log.
- Cut the log into 12 equal slices and arrange them, cut-side up, on a baking sheet lined with parchment paper.
- Bake for 18-22 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
- Serve the Cheesy Baked Vegetable Rolls warm, garnished with additional fresh parsley if desired.
