Ingredients

  • 1 pound lean ground beef
  • 1 large white onion, diced
  • 3 cloves garlic, minced
  • 1 medium head green cabbage, chopped into -inch cubes
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon pepper, plus more to taste
  • 1 (32-ounce) can tomato sauce
  • 3 cups low-sodium beef broth
  • 1 cup long-grain white rice, rinsed
  • 2 cups freshly shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a large 9×13-inch casserole dish with non-stick cooking spray.
  2. Heat a large skillet over medium heat. Add the ground beef and cook until it is no longer pink. Drain excess grease and set aside.
  3. Add olive oil to the skillet and stir in the diced onion. Cook until softened, about 10 minutes. Add garlic, Italian seasoning, paprika, salt, and pepper, cooking for 30 to 60 seconds.
  4. Add chopped cabbage and cook until it begins to soften, about 5 minutes. Pour in tomato sauce and beef broth, mix well, and bring to a simmer for 1 to 2 minutes.
  5. Transfer the mixture into the prepared baking dish. Add rinsed rice and browned beef, mixing thoroughly.
  6. Cover the baking dish tightly with foil and bake for 45 minutes.
  7. Remove the foil and fluff the mixture with a fork. Sprinkle shredded cheese over the top and return to the oven to bake uncovered for an additional 10 to 20 minutes.
  8. Garnish with freshly chopped parsley and serve with sour cream if desired.
