- 1 lb ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the ground beef to the pot and cook until browned.
- Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Once the potatoes are cooked, stir in the heavy cream and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot and enjoy!
