Ingredients

  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
