Description

Cheesecake Stuffed Strawberries are a refreshing no-bake dessert that combines juicy strawberries with a creamy cheesecake filling, perfect for any occasion.

Ingredients

Scale
  • 1 pint Strawberries (Choose firm, ripe strawberries)
  • 1 tablespoon Granulated Sugar (Optional, for enhancing sweetness)
  • 8 ounces Cream Cheese (Use vegan for dairy-free options)
  • 1/2 cup Sweetened Condensed Milk (Greek yogurt mixed with honey works for a lighter alternative)
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Apricot Jam (Substitute with clear fruit preserves if desired)
  • 1 tablespoon Water (To thin out the jam)
  • 1/4 cup Toasted Almond Slivers (For garnish)
  • 1/4 cup Crushed Pistachios (For garnish)

Instructions

  1. Rinse the strawberries gently under cool water, then pat them dry with a paper towel. Carefully remove the leafy tops to prepare them for filling.
  2. Hollow each strawberry by using a small paring knife, cutting about ½ inch deep from the top. This creates a little pocket for the cheesecake mixture.
  3. Sprinkle optional granulated sugar over the hollowed strawberries to enhance their sweetness. Place them upside-down on a paper towel to drain excess moisture.
  4. Beat the cream cheese in a mixing bowl until smooth and creamy. Add the sweetened condensed milk, fresh lemon juice, and vanilla extract, then mix until fully combined.
  5. Warm the apricot jam with water in a small saucepan over low heat, stirring until it becomes liquefied. Allow it to cool slightly—this will be your glaze!
  6. Pipe the cheesecake filling into each hollowed strawberry, smoothing the top for a beautiful finish.
  7. Garnish the filled strawberries with optional toasted almond slivers or crushed pistachios for an extra touch of texture and elegance before serving chilled.
