Description

This Blackened Chicken Alfredo Garlic Bread combines spicy blackened chicken with creamy homemade Alfredo sauce atop crispy Italian bread, loaded with melted mozzarella and cheddar cheeses.

  • 1 loaf Italian bread, sliced lengthwise
  • ½ cup (1 stick / 113 g) unsalted butter, softened
  • 1 teaspoon garlic salt
  • 2 boneless skinless chicken breasts (about 1 pound total), cut into ½-inch pieces
  • 1 tablespoon blackened seasoning (store-bought or homemade)
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced (about ½ cup)
  • 2 teaspoons garlic, minced
  • 2 cups (476 g) heavy whipping cream
  • 2 cups (200 g) Parmesan cheese, finely grated
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 cup (113 g) white cheddar cheese, shredded
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper to prepare for baking the garlic bread.
  2. Place the Italian bread cut side up on the baking sheet. Evenly spread the softened butter over both halves and sprinkle garlic salt on top. Bake for 8 to 10 minutes until the bread is lightly golden and crisp. Remove and set aside.
  3. In a medium bowl, toss the chicken pieces with blackened seasoning until fully coated for bold flavor.
  4. Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook for 3 to 4 minutes per side, until golden brown and cooked through. Transfer chicken to a plate and tent with foil to keep warm.
  5. In a separate saucepan over medium heat, melt butter. Add diced onion and cook for 3 to 4 minutes until translucent. Stir in minced garlic and cook 30 seconds, releasing aroma.
  6. Pour in heavy cream and bring to gentle simmer without boiling. Stir in Parmesan cheese, salt, pepper, and crushed red pepper flakes. Stir continuously until cheese melts and sauce thickens slightly, about 3 to 5 minutes. Remove from heat.
  7. Spoon about ¾ cup of Alfredo sauce over each toasted bread half, spreading evenly to the edges. Save about ½ cup of sauce for serving on the side.
  8. Top the sauce-covered bread halves with blackened chicken pieces, then sprinkle shredded mozzarella and white cheddar evenly on top.
  9. Return the prepared bread to the oven and bake for 8 to 10 minutes until cheese is melted and bubbly. Optionally, broil for 1 to 2 minutes to achieve a golden, crispy cheese topping, watching carefully to prevent burning.
  10. Let the bread rest for 2 to 3 minutes, garnish with fresh chopped parsley, slice into pieces, and serve warm with the reserved Alfredo sauce for dipping.
