  • 1 & 3/4 cup all-purpose flour + 1 tbsp all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup cornmeal
  • 1 cup Captain Crunch cereal, finely crushed
  • 1/2 tsp salt
  • Extra crushed Captain Crunch cereal for rolling the cookie dough
  • 2 tsp butter, softened
  • 3/4 cup powdered sugar
  • 3 oz cream cheese
  • 1 tsp vanilla flavoring
  • 23 tsp milk or half and half

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, vanilla flavoring, and butter flavoring, mixing until fully combined.
  3. Add the all-purpose flour, baking soda, baking powder, salt, cornmeal, and finely crushed Captain Crunch cereal. Stir until fully incorporated.
  4. Using a large cookie scooper, portion out 10 equal cookie dough balls. Roll each ball in extra crushed Captain Crunch cereal. Place on the baking sheet and flatten the tops gently.
  5. Bake for 9 to 10 minutes until lightly golden and set around the edges.
  6. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  7. Cream together the softened cream cheese and butter until smooth. Add powdered sugar and vanilla extract, beating until smooth.
