- 6 hard-boiled eggs
- 1 avocado, peeled and pitted
- 1 lime, juiced
- 2 tbsp red onion, finely chopped

Instructions
- Cut the hard-boiled eggs in half lengthwise and carefully scoop out the yolks into a mixing bowl. Arrange the egg white halves on a serving platter, ready for filling.
- In the bowl with the egg yolks, add the peeled and pitted avocado, fresh lime juice, finely chopped red onion, cilantro, garlic powder, salt, and pepper. Use a fork to mash all the ingredients together until the mixture is smooth and creamy.
- Using a spoon, scoop the creamy avocado and egg yolk mixture and dollop it back into the egg white halves. For a neater presentation, you can also pipe the mixture into the whites using a piping bag.
- Sprinkle extra red onion and cilantro on top as garnish. Serve immediately to enjoy the freshest flavors and best texture.
