  • 6 hard-boiled eggs
  • 1 avocado, peeled and pitted
  • 1 lime, juiced
  • 2 tbsp red onion, finely chopped
  • 2 tbsp cilantro, finely chopped
  • 1 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and carefully scoop out the yolks into a mixing bowl. Arrange the egg white halves on a serving platter, ready for filling.
  2. In the bowl with the egg yolks, add the peeled and pitted avocado, fresh lime juice, finely chopped red onion, cilantro, garlic powder, salt, and pepper. Use a fork to mash all the ingredients together until the mixture is smooth and creamy.
  3. Using a spoon, scoop the creamy avocado and egg yolk mixture and dollop it back into the egg white halves. For a neater presentation, you can also pipe the mixture into the whites using a piping bag.
  4. Sprinkle extra red onion and cilantro on top as garnish. Serve immediately to enjoy the freshest flavors and best texture.
