Description

These Almond Croissant Cookie Bars blend rich, nutty flavors of almond croissants with the chewy texture of cookie bars, perfect for any occasion.


Ingredients

  • 1 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 large Eggs
  • 1 teaspoon Almond Extract
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 8 ounces Almond Paste
  • 1/2 cup Sliced Almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking pan by lining it with parchment paper and lightly greasing it.
  3. Beat together the unsalted butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy.
  4. Add the eggs, almond extract, and vanilla extract, mixing until fully combined.
  5. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl. Gradually add this mixture to the wet ingredients, mixing just until combined.
  6. Press half of the dough evenly into the prepared pan.
  7. Crumble almond paste evenly over the surface of the dough.
  8. Top with the remaining dough, gently pressing it over the almond paste layer.
  9. Sprinkle sliced almonds on top of the dough, pressing them in gently.
  10. Bake for 25-28 minutes until edges are golden brown and the center is set.
  11. Let them cool completely in the pan on a wire rack.
  12. Dust with powdered sugar before slicing and serving.
