Ingredients

  • 1 cup lentils
  • 2 cups butternut squash, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water.
