Description

Tres Leches Cake is a moist dessert made from a light sponge cake soaked in a three-milk mixture with rum. Topped with whipped cream and fresh berries, it balances sweetness and creaminess.


Ingredients

  • 6 large eggs (separated)
  • ⅔ cup sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 3 tablespoons sugar (for egg whites)
  • 14 ounce sweetened condensed milk (1 can)
  • 12 ounce evaporated milk (1 can)
  • 23 tablespoons rum
  • 16 ounce whipped cream (such as Cool Whip)
  • Cocoa powder
  • Mixed berries (such as strawberries, raspberries, blueberries)

Instructions

  1. Preheat your oven to 375℉. Spray a 9×13 inch baking pan generously with cooking spray. Set aside.
  2. Separate the eggs. Place egg whites in one bowl and yolks in another. To the yolks, add ⅔ cup sugar and 2 teaspoons vanilla extract. Beat until thick and creamy.
  3. In a separate bowl, whisk together 2 cups flour, 1 tablespoon baking powder, and ¼ teaspoon salt. Gradually add half to the yolk mixture, whisking until smooth. Incorporate ½ cup milk, then add the remaining dry ingredients.
  4. Beat the egg whites on high speed until stiff peaks form. Gradually add 3 tablespoons sugar while beating until glossy.
  5. Gently fold the beaten egg whites into the thick batter.
  6. Pour the batter into the prepared pan. Bake for about 20 minutes or until a toothpick comes out clean. Let the cake cool in the pan for 10 minutes.
  7. Whisk together 14 ounces sweetened condensed milk, 12 ounces evaporated milk, and 2-3 tablespoons rum.
  8. Pierce the warm cake’s surface several times with a fork. Pour the milk mixture evenly over the cake. Cover and refrigerate for at least 3 hours or overnight.
  9. Before serving, top with 16 ounces whipped cream. Optionally, dust with cocoa powder and garnish with mixed berries.
