Description
Tres Leches Cake is a moist dessert made from a light sponge cake soaked in a three-milk mixture with rum. Topped with whipped cream and fresh berries, it balances sweetness and creaminess.
Ingredients
Scale
- 6 large eggs (separated)
- ⅔ cup sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup milk
- 3 tablespoons sugar (for egg whites)
- 14 ounce sweetened condensed milk (1 can)
- 12 ounce evaporated milk (1 can)
- 2–3 tablespoons rum
- 16 ounce whipped cream (such as Cool Whip)
- Cocoa powder
- Mixed berries (such as strawberries, raspberries, blueberries)
Instructions
- Preheat your oven to 375℉. Spray a 9×13 inch baking pan generously with cooking spray. Set aside.
- Separate the eggs. Place egg whites in one bowl and yolks in another. To the yolks, add ⅔ cup sugar and 2 teaspoons vanilla extract. Beat until thick and creamy.
- In a separate bowl, whisk together 2 cups flour, 1 tablespoon baking powder, and ¼ teaspoon salt. Gradually add half to the yolk mixture, whisking until smooth. Incorporate ½ cup milk, then add the remaining dry ingredients.
- Beat the egg whites on high speed until stiff peaks form. Gradually add 3 tablespoons sugar while beating until glossy.
- Gently fold the beaten egg whites into the thick batter.
- Pour the batter into the prepared pan. Bake for about 20 minutes or until a toothpick comes out clean. Let the cake cool in the pan for 10 minutes.
- Whisk together 14 ounces sweetened condensed milk, 12 ounces evaporated milk, and 2-3 tablespoons rum.
- Pierce the warm cake’s surface several times with a fork. Pour the milk mixture evenly over the cake. Cover and refrigerate for at least 3 hours or overnight.
- Before serving, top with 16 ounces whipped cream. Optionally, dust with cocoa powder and garnish with mixed berries.
Notes
- Adjust rum amount to taste.
- Refrigerate overnight for best results.
