Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Cream together the butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Stir in the mashed sweet potatoes.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, beat the cream cheese and powdered sugar together until smooth.
- Scoop the cookie dough into tablespoon-sized balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
- Using your thumb, make an indentation in the center of each cookie dough ball.
- Spoon a small amount of the cheesecake filling into the indentation of each cookie.
- Bake for 12-14 minutes, or until the cookies are lightly golden.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
