Ingredients

  • 1 package strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil or canola oil
  • 3 large eggs
  • 2 tablespoons canned white, vanilla, or cream cheese frosting
  • 20 ounces vanilla melting chocolate or almond bark
  • Pink or red food coloring gel (for coloring half of the cake pops)
  • Valentine’s Day sprinkles

Instructions

  1. Combine the strawberry cake mix with water, vegetable or canola oil, and eggs in a mixing bowl. Mix until smooth according to the package instructions.
  2. Pour the batter into a 9×13-inch baking pan and bake as directed on the package, typically around 25-35 minutes, until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
  3. Using a fork or your hands, crumble the cooled cake into fine crumbs in a large mixing bowl to prepare for forming the pops.
  4. Add 2 tablespoons of white, vanilla, or cream cheese frosting to the cake crumbs. Use your hands or an electric mixer to blend until a dough-like consistency forms. Add more frosting if necessary until the mixture holds together well.
  5. Roll the cake mixture into even 1-inch balls. Place the balls on a baking sheet lined with parchment paper to prevent sticking.
  6. Melt a small amount of the vanilla melting chocolate in the microwave. Dip the tip of each cake pop stick into the melted chocolate, then insert it halfway into each cake ball. This helps secure the stick. Refrigerate the pops for 1 hour to firm up.
  7. Melt the remaining vanilla melting chocolate in the microwave until smooth. Divide the melted chocolate evenly into two bowls. Add pink food coloring gel to one bowl to achieve the desired shade of pink and mix well.
  8. Dip each cake pop into the melted chocolate until fully coated, scraping off excess chocolate on the side of the bowl. Alternate between the pink and white coatings as desired. Place the coated pops upright in a holder or foam base to let the chocolate harden.
  9. Before the chocolate sets, quickly add Valentine’s Day sprinkles to each cake pop for decorative flair. Allow the pops to set completely and then refrigerate until ready to serve.
