Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
  2. Heat vegetable oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet in a single layer. Cook for 5–7 minutes, stirring occasionally until golden and cooked through.
  3. Stir in minced garlic and grated ginger once the chicken is browned. Cook for about 1 minute until fragrant.
  4. In a small bowl, whisk together sweet chili sauce, soy sauce, and honey. Pour the mixture into the skillet with the chicken. Stir to coat everything evenly and let it simmer for 2–3 minutes until the sauce thickens.
  5. Add the cooked penne to the skillet and toss well to combine. If the sticky sweet chili garlic sauce is too thick, add a splash of reserved pasta water to loosen it slightly.
