Description

Smoked Sausage Cajun Alfredo combines bold flavors and creamy sauce for a delightful dinner experience.


Ingredients

  • 8 ounces penne
  • 12 ounces Chicken Cajun andouille sausage
  • 2 tablespoons neutral oil
  • 3 tablespoons unsalted butter
  • 1.5 cups low-sodium chicken broth
  • 2 cloves grated garlic
  • 2 tablespoons tomato paste
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 2 cups finely grated Parmesan
  • 1/4 cup finely chopped fresh parsley

Instructions

  1. Heat the oil in a 12″ skillet over medium heat. Once shimmering, add the sausage slices and cook until golden brown, about 3 to 4 minutes per side. Transfer to a plate and set aside.
  2. Boil a large pot of salted water, then add the penne pasta. Cook until it’s very al dente, around 2 minutes less than what the package suggests. Remember to reserve about 1/2 cup of pasta water before draining!
  3. Combine 1 tablespoon of butter and a splash of chicken broth in the same skillet over medium-high heat. Scrape the brown bits off the bottom, then add the grated garlic and tomato paste. Stir until fragrant, about 1 minute.
  4. Add the Cajun seasoning and the remaining 1 1/2 cups of broth. Stir until mixed well, then gradually whisk in the heavy cream. Bring everything to a boil, then reduce the heat to medium-low to simmer for 5 minutes, whisking constantly.
  5. Whisk in 2 cups of Parmesan until the sauce thickens and is glossy. Add the last tablespoon of butter and whisk until melted.
  6. Toss the drained pasta into the skillet, ensuring it’s evenly coated in the creamy sauce. Use the reserved pasta water as needed to achieve your desired sauce consistency.
  7. Return the cooked sausage to the skillet and gently mix. Finish by topping with fresh parsley and a sprinkle of Parmesan for a lovely presentation.
