- 8 ounces penne
- 12 ounces Chicken Cajun andouille sausage
- 2 tablespoons neutral oil
- 3 tablespoons unsalted butter
- 1.5 cups low-sodium chicken broth
- 2 cloves grated garlic
- 2 tablespoons tomato paste
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- 2 cups finely grated Parmesan
- 1/4 cup finely chopped fresh parsley
Instructions
- Heat the oil in a 12″ skillet over medium heat. Once shimmering, add the sausage slices and cook until golden brown, about 3 to 4 minutes per side. Transfer to a plate and set aside.
- Boil a large pot of salted water, then add the penne pasta. Cook until it’s very al dente, around 2 minutes less than what the package suggests. Remember to reserve about 1/2 cup of pasta water before draining!
- Combine 1 tablespoon of butter and a splash of chicken broth in the same skillet over medium-high heat. Scrape the brown bits off the bottom, then add the grated garlic and tomato paste. Stir until fragrant, about 1 minute.
- Add the Cajun seasoning and the remaining 1 1/2 cups of broth. Stir until mixed well, then gradually whisk in the heavy cream. Bring everything to a boil, then reduce the heat to medium-low to simmer for 5 minutes, whisking constantly.
- Whisk in 2 cups of Parmesan until the sauce thickens and is glossy. Add the last tablespoon of butter and whisk until melted.
- Toss the drained pasta into the skillet, ensuring it’s evenly coated in the creamy sauce. Use the reserved pasta water as needed to achieve your desired sauce consistency.
- Return the cooked sausage to the skillet and gently mix. Finish by topping with fresh parsley and a sprinkle of Parmesan for a lovely presentation.
