  • 2 ½ cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Kosher Salt
  • 8 tablespoons Cold Unsalted Butter
  • 1 ½ cups Freshly Grated Apple Smoked Cheddar
  • ⅔ cup Sour Cream
  • ½ cup Whole Milk
  • Heavy cream, for brushing tops

Instructions

  1. In a large bowl, combine flour, baking powder, baking soda, and kosher salt. Mix well.
  2. Grate or finely chop the cold butter. Add to the dry ingredients and mix with your hands until it resembles coarse crumbs.
  3. Stir in the grated apple smoked cheddar cheese until evenly dispersed.
  4. In a separate bowl, whisk together sour cream and whole milk until smooth.
  5. Make a well in the center of the dry ingredients. Pour in the wet ingredients.
  6. Stir gently until just combined. Bring the dough together with your hands, being careful not to overwork it.
  7. Wrap the dough tightly in plastic wrap and refrigerate for 20 to 30 minutes.
  8. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  9. Roll the chilled dough out to about 1 inch thick. Fold it in half, then roll out again to 1 inch thick. Repeat this folding and rolling process one more time.
  10. Use a 2-inch biscuit cutter to cut rounds from the dough. Place biscuits on the prepared baking sheet, spaced slightly apart.
  11. Lightly brush the tops of the biscuit rounds with heavy cream. Press a fresh herb onto each biscuit top, if desired.
  12. Bake for 12 to 15 minutes, or until golden brown on top.
  13. Serve warm.
