  • 1 pound Pork Mince
  • 3 stalks Spring Onions, chopped

  • 0.5 cup Coriander, fresh, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 tablespoon Light Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Rice Wine Vinegar
  • 1 egg
  • 1 carrot, shredded
  • 1 cup Cucumber, sliced
  • 2 stalks Spring Onions, optional garnish
  • 0.5 cup Coriander, for toppings

Instructions

  1. Prepare Wrapper Dough: In a mixing bowl, combine the plain flour and salt. Gradually pour in the boiling water while stirring until a rough dough begins to form. Allow it to rest after kneading until smooth for about 15 minutes.
  2. Make Filling: In another bowl, mix the pork mince, spring onions, chives, coriander, garlic, ginger, light and dark soy sauces, sesame oil, rice wine vinegar, egg, and a pinch of salt and pepper. Stir until everything is well combined and aromatic.
  3. Shape Wrappers: Divide the rested dough into small portions. Roll each piece into circles, about 3-4 inches wide, and add 1-2 tablespoons of the filling to the center.
  4. Cook Tacos: Heat a skillet with oil over medium heat. Smash each filled dough circle slightly with a spatula, place them in the pan, and fry for 2 minutes until golden brown. Add a splash of water carefully, cover, and steam for 1 minute. Uncover, and let them crisp for another 2-3 minutes.
  5. Serve: Top your tacos with shredded carrot, cucumber slices, fresh spring onions, and a sprinkle of coriander. Enjoy them hot for the best flavor!
