This Slow Cooker French Dip Sandwiches recipe features tender, flavorful ribeye cooked low and slow with aromatic herbs and a rich broth. Served on crusty rolls with melted Swiss cheese and a savory au jus for dipping.

- 4 pound ribeye loin (boneless) or chuck roast or sirloin
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 tablespoon oregano
- 1 tablespoon olive oil
- 2 large onions, sliced
- 10 cloves garlic, minced
- 2 bay leaves
- ¼ cup Worcestershire sauce
- ¼ cup white wine
- 3 cups low sodium beef broth
- 8 crusty rolls or French baguette
- 8 slices Swiss cheese (optional)
Instructions
- Tie the beef with kitchen twine if necessary. In a small bowl, combine salt, black pepper, and oregano. Generously rub this seasoning mix all over the beef ensuring even coverage.
- Heat olive oil in a large skillet over medium-high heat. Sear the seasoned beef on all sides until it develops a nice brown crust.
- Add sliced onions, minced garlic, bay leaves, Worcestershire sauce, white wine, and beef broth to the slow cooker. Stir gently to combine.
- Place the seared beef into the slow cooker, pouring some of the liquid over it. Cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours until the beef reaches desired doneness.
- Remove the beef from the slow cooker and transfer it to a cutting board. Cover loosely with foil and let it rest for 10 to 15 minutes.
- Pour the remaining liquid from the slow cooker through a fine mesh strainer, reserving both the strained liquid and onions. Discard the bay leaves.
- Cut the rested beef as thinly as possible.
- Slice the rolls in half, layer with sliced beef, reserved onions, and top with a slice of Swiss cheese if desired. Place the assembled rolls under the broiler for a few minutes until the cheese melts (optional).
- Serve the sandwiches immediately alongside the reserved au jus for dipping.
