Description

This Slow Cooker French Dip Sandwiches recipe features tender, flavorful ribeye cooked low and slow with aromatic herbs and a rich broth. Served on crusty rolls with melted Swiss cheese and a savory au jus for dipping.


Ingredients

  • 4 pound ribeye loin (boneless) or chuck roast or sirloin
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 tablespoon oregano
  • 1 tablespoon olive oil
  • 2 large onions, sliced
  • 10 cloves garlic, minced
  • 2 bay leaves
  • ¼ cup Worcestershire sauce
  • ¼ cup white wine
  • 3 cups low sodium beef broth
  • 8 crusty rolls or French baguette
  • 8 slices Swiss cheese (optional)

Instructions

  1. Tie the beef with kitchen twine if necessary. In a small bowl, combine salt, black pepper, and oregano. Generously rub this seasoning mix all over the beef ensuring even coverage.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the seasoned beef on all sides until it develops a nice brown crust.
  3. Add sliced onions, minced garlic, bay leaves, Worcestershire sauce, white wine, and beef broth to the slow cooker. Stir gently to combine.
  4. Place the seared beef into the slow cooker, pouring some of the liquid over it. Cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours until the beef reaches desired doneness.
  5. Remove the beef from the slow cooker and transfer it to a cutting board. Cover loosely with foil and let it rest for 10 to 15 minutes.
  6. Pour the remaining liquid from the slow cooker through a fine mesh strainer, reserving both the strained liquid and onions. Discard the bay leaves.
  7. Cut the rested beef as thinly as possible.
  8. Slice the rolls in half, layer with sliced beef, reserved onions, and top with a slice of Swiss cheese if desired. Place the assembled rolls under the broiler for a few minutes until the cheese melts (optional).
  9. Serve the sandwiches immediately alongside the reserved au jus for dipping.
