  • 2 cups Sweet Potatoes (peeled and diced)
  • 1 can Black Beans (rinsed and drained)
  • 1 can Diced Tomatoes
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 4 cups Vegetable Broth (low-sodium preferred)
  • 2 tablespoons Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt (to taste)
  • 1/2 teaspoon Black Pepper (to taste)

Instructions

  1. Begin by peeling and dicing the sweet potatoes into bite-sized cubes.
  2. Chop the onion and mince the garlic.
  3. Add the sweet potatoes, black beans, diced tomatoes, onion, garlic, and spices into the slow cooker.
  4. Pour in the vegetable broth, stirring everything together.
  5. Set your slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours.
  6. Once cooked, taste the chili and adjust the seasoning if needed.
