- 1 cup Jasmine Rice (Swap with long-grain white rice if needed.)
- 2 cups Low-sodium Chicken Broth (Vegetable broth works for a vegetarian spin.)
- 1 lb Shrimp (Peeled and deveined; chicken can be a good alternative.)
- 8 oz Andouille Sausage (Sliced; any smoked sausage makes a suitable substitute.)
- 1 cup Bell Peppers (Chopped, mixed colors; zucchini or other veggies can elevate nutrition.)
- 1 medium Yellow Onion (Chopped; white onion is an acceptable option.)
- 3 cloves Garlic (Minced; pre-minced garlic can save time.)
- 2 tsp Cajun Seasoning (Adjust to cater to personal heat preference.)
Instructions
- Start by chopping the onion and bell peppers, and mincing the garlic.
- Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onions and bell peppers, sauté until soft, about 5 minutes. Stir in the minced garlic and sliced sausage, cooking until the sausage is nicely browned.
- Stir in the jasmine rice along with the Cajun seasoning and cook for an additional minute.
- Pour in the chicken broth, bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes.
- Gently fold in the shrimp, cover, and cook for another 5-7 minutes, until shrimp turns pink and opaque.
- Remove from heat and let sit for 5 minutes. Fluff the rice with a fork, tasting and adjusting seasonings.
