  • 1 lb Shrimp (Peeled and deveined; chicken can be a good alternative.)
  • 8 oz Andouille Sausage (Sliced; any smoked sausage makes a suitable substitute.)
  • 1 cup Bell Peppers (Chopped, mixed colors; zucchini or other veggies can elevate nutrition.)
  • 1 medium Yellow Onion (Chopped; white onion is an acceptable option.)
  • 3 cloves Garlic (Minced; pre-minced garlic can save time.)
  • 2 tsp Cajun Seasoning (Adjust to cater to personal heat preference.)

Instructions

  1. Start by chopping the onion and bell peppers, and mincing the garlic.
  2. Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onions and bell peppers, sauté until soft, about 5 minutes. Stir in the minced garlic and sliced sausage, cooking until the sausage is nicely browned.
  3. Stir in the jasmine rice along with the Cajun seasoning and cook for an additional minute.
  4. Pour in the chicken broth, bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes.
  5. Gently fold in the shrimp, cover, and cook for another 5-7 minutes, until shrimp turns pink and opaque.
  6. Remove from heat and let sit for 5 minutes. Fluff the rice with a fork, tasting and adjusting seasonings.
