Ingredients

  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 tablespoon Ginger
  • 1 medium Shallot
  • 1 pound Ground Pork
  • 1 medium Carrot
  • 1 tablespoon Fish Sauce
  • 2 tablespoons Tamari
  • 3 stalks Green Onions
  • 1/4 cup Cilantro
  • 8 leaves Cabbage Leaves
  • 2 tablespoons Tamari (for drizzling)
  • 1 tablespoon Sugar-free Maple Syrup
  • 1 tablespoon Toasted Sesame Oil
  • 1 tablespoon Lime Juice

Instructions

  1. Boil a large pot of water until it reaches a rolling boil. Blanch cabbage leaves for 1-2 minutes until bright green. Transfer to an ice bath.
  2. Sauté in a large skillet by heating olive oil over medium heat. Add finely chopped shallots and sauté for 3-4 minutes. Stir in minced garlic and grated ginger.
  3. Brown ground pork in the skillet for about 5-6 minutes. Add grated carrot, fish sauce, tamari, chopped green onions, and cilantro. Stir well and remove from heat.
  4. Prepare each cabbage leaf by cutting a V-shape at the base. Place 2-3 spoonfuls of filling in the center and roll, tucking in the sides.
  5. Preheat oven to 350°F (175°C). Arrange rolls seam-side down in a baking dish. Whisk together tamari, maple syrup, sesame oil, and lime juice; drizzle over the rolls.
  6. Bake uncovered for 15-20 minutes until heated through and tops are caramelized.
