Ingredients

- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 1 medium White onion
- 1 medium Carrot
- 1 rib Celery
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 cloves Garlic
- 1 pound Ground beef (85/15)
- 1 tablespoon Italian seasoning
- 1 teaspoon White pepper
- 2 tablespoons Tomato paste
- 1 tablespoon Worcestershire sauce
- 2 tablespoons All-purpose flour
- 1 cup Beef stock or broth
- 1 medium Russet potato
- 1 tablespoon Fresh thyme leaves
- 2 tablespoons Finely chopped parsley
- 1 cup Green peas
- 2 sheets Puff pastry (frozen)
- 1 egg Whisked
- 1 teaspoon Flaky salt (Optional garnish)
Instructions
- Gather and prep all ingredients except puff pastry sheets; keep those frozen.
- Heat a skillet over medium-high heat, add butter and olive oil, then sauté onion, carrot, celery, salt, and pepper until soft.
- Add garlic, beef, Italian seasoning, white pepper, and more salt and pepper. Cook until beef is browned.
- Stir in tomato paste and Worcestershire sauce, then add flour and mix well.
- Pour in beef stock with diced potato, cover, and simmer for 25-35 minutes or until potatoes are tender.
- Stir in thyme, parsley, and peas. Cool filling completely.
- Thaw puff pastry at room temperature for 40-45 minutes.
- Roll each pastry sheet into squares and cut into smaller pieces.
- Place filling in the center of each square, leaving a border.
- Wet edges, cover with another square, and seal tightly.
- Cut slits on top, chill in the freezer for 15-20 minutes.
- Preheat oven to 400°F.
- Brush pastries with egg wash, sprinkle salt, and bake for 24-26 minutes until golden brown.
- Cool on a rack for 10 minutes before serving.
