Instructions
- Soak the Guajillo and Ancho chiles in near-boiling water for at least 30 minutes.
- Season the chuck roast chunks with kosher salt and black pepper.
- In a Dutch oven, heat vegetable oil and sear the seasoned roast until golden-brown.
- Blend the softened chiles with tomatoes, onion, garlic, and spices until smooth.
- Combine the blended marinade with the seared beef, short ribs, broth, orange juice, vinegar, and cinnamon stick.
- Cover and simmer on low heat for 2.5 to 3 hours until meat is tender.
- Remove beef, shred it, and warm the corn tortillas until pliable.
- Assemble tacos with shredded beef, cheese, onion, cilantro, and lime.
