Instructions

  1. Soak the Guajillo and Ancho chiles in near-boiling water for at least 30 minutes.
  2. Season the chuck roast chunks with kosher salt and black pepper.
  3. In a Dutch oven, heat vegetable oil and sear the seasoned roast until golden-brown.
  4. Blend the softened chiles with tomatoes, onion, garlic, and spices until smooth.
  5. Combine the blended marinade with the seared beef, short ribs, broth, orange juice, vinegar, and cinnamon stick.
  6. Cover and simmer on low heat for 2.5 to 3 hours until meat is tender.
  7. Remove beef, shred it, and warm the corn tortillas until pliable.
  8. Assemble tacos with shredded beef, cheese, onion, cilantro, and lime.
