- 1 lb pork tenderloin
- 1 cup apple cider
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- 3 medium sweet potatoes, peeled and cubed
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Season the pork tenderloin with salt and pepper.
- In a large oven-safe skillet, sear the pork on all sides over medium-high heat until browned, about 2-3 minutes per side.
- Transfer the skillet to the oven and roast for 10-12 minutes, or until the pork reaches an internal temperature of 145°F.
- Meanwhile, in a saucepan, combine the apple cider and brown sugar. Bring to a simmer and cook for 5-7 minutes, until reduced and thickened.
- Add the minced garlic and chopped thyme to the cider glaze and stir to combine.
- In a separate pot, cover the cubed sweet potatoes with water and bring to a boil. Cook for 15-20 minutes, until tender.
- Drain the sweet potatoes and mash with the butter. Season with salt and pepper to taste.
- Slice the pork tenderloin and drizzle the apple cider glaze over the top.
- Serve the pork tenderloin with the sweet potato mash on the side.
