- 1 cup pine nuts
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a food processor, combine the crumbled almond paste, powdered sugar, egg whites, and kosher salt. Pulse until smooth.
- Lightly dampen your hands and roll the dough into 1-inch balls. Roll each ball in the pine nuts.
- Place the nut-coated balls onto the prepared baking sheets and flatten slightly.
- Bake for 16 to 18 minutes until lightly golden on the edges.
- Let the cookies cool on the baking sheet for 1 minute, then transfer to a wire rack.
