  • 1/4 cup Avocado or Olive Oil
  • 1/2 cup Chicken Broth
  • 1/2 cup White Wine

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the chicken generously with sea salt and ground black pepper.
  3. Arrange the shallots, whole garlic cloves, fresh thyme, and rosemary in a large roasting pan.
  4. Drizzle the avocado or olive oil over the chicken and the vegetables.
  5. Pour the chicken broth and white wine into the pan, surrounding the chicken with liquid.
  6. Roast in the oven for 60 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
