Description

Omurice is a delightful Japanese rice omelet that combines fluffy eggs with savory fried rice, a comforting dish perfect for any craving.

Ingredients

Scale
  • 1 cup Yellow Onion
  • 2 cloves Garlic
  • 68 oz Chicken Thighs
  • 1/4 cup Frozen Mixed Vegetables
  • 3 pieces Brown Mushrooms
  • 2 cups Cooked White Rice
  • 2 tablespoons Ketchup
  • 1 tablespoon Soy Sauce
  • 6 large Eggs
  • 2 tablespoons Milk
  • 1/2 teaspoon Salt
  • Ketchup (for extra flavor)
  • 1 tablespoon Minced Parsley

Instructions

  1. Cook your rice a day ahead if possible to achieve the best texture.
  2. In a large frying pan, heat oil over medium heat. Sauté the chopped yellow onion and minced garlic for about 2 minutes.
  3. Add seasoned chicken thighs to the pan. Sauté until cooked through and no longer pink.
  4. Toss in the brown mushrooms and frozen mixed vegetables. Stir-fry for about 1 minute.
  5. Add the cooked rice to the pan, breaking up any clumps as you mix in the ketchup and soy sauce.
  6. Transfer the rice mixture onto a plate by first mounding it in a bowl.
  7. In a separate non-stick skillet, whisk together the eggs, milk, and salt. Pour into the greased skillet and cook until slightly scrambled.
  8. Gently slide the partially cooked omelet over the mound of rice. Garnish with ketchup and minced parsley as desired.

Notes

  • Day-old rice is firmer, but fresh rice can also be used.
  • Adjust the garlic and salt to your preference.
  • For a vegetarian option, substitute chicken with tofu or shrimp.
  • Use tamari for a gluten-free dish.
