Description

This English Muffin Baklava is a quick and delicious twist on the classic Middle Eastern dessert, combining toasted English muffins with a rich pistachio-walnut butter, gooey mascarpone cheese, and drizzled honey.


Ingredients

  • 1/3 cup walnuts
  • 1/3 cup pistachios
  • 1/4 cup (4 tablespoons) butter, softened or melted
  • 2 tablespoons brown sugar
  • English muffins
  • Honey, for drizzling
  • Mascarpone cheese, for topping

Instructions

  1. Preheat your oven broiler, selecting a low broil setting if available.
  2. Pulse the walnuts and pistachios in a food processor until finely chopped. Reserve a few spoonfuls for garnish. Combine with butter and brown sugar.
  3. Place the English muffins on a foil-lined baking sheet and toast in the oven for about 3 minutes.
  4. Spread the nut-butter-sugar mixture over the toasted English muffins and broil for about 1 minute.
  5. Dollop mascarpone cheese onto each muffin half and sprinkle reserved chopped nuts on top. Drizzle with honey.
  6. Serve immediately with coffee.
