This English Muffin Baklava is a quick and delicious twist on the classic Middle Eastern dessert, combining toasted English muffins with a rich pistachio-walnut butter, gooey mascarpone cheese, and drizzled honey.

- 1/3 cup walnuts
- 1/3 cup pistachios
- 1/4 cup (4 tablespoons) butter, softened or melted
- 2 tablespoons brown sugar
- English muffins
- Honey, for drizzling
- Mascarpone cheese, for topping
Instructions
- Preheat your oven broiler, selecting a low broil setting if available.
- Pulse the walnuts and pistachios in a food processor until finely chopped. Reserve a few spoonfuls for garnish. Combine with butter and brown sugar.
- Place the English muffins on a foil-lined baking sheet and toast in the oven for about 3 minutes.
- Spread the nut-butter-sugar mixture over the toasted English muffins and broil for about 1 minute.
- Dollop mascarpone cheese onto each muffin half and sprinkle reserved chopped nuts on top. Drizzle with honey.
- Serve immediately with coffee.
