- 1 pound large shrimp, peeled and deveined
- 3 cups fresh or frozen corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, melt the butter over medium heat.
- Add the diced onion and minced garlic. Sauté for 3-4 minutes until fragrant and translucent.
- Add the corn kernels and Cajun seasoning. Cook for an additional 2-3 minutes.
- Pour in the broth and heavy cream. Bring the mixture to a simmer and let it cook for 10-12 minutes, stirring occasionally, until the corn is tender.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Add the peeled and deveined shrimp to the blended soup. Simmer for 5-7 minutes, or until the shrimp are cooked through.
- Stir in the dried thyme and season with salt and black pepper to taste.
- Serve the New Orleans Shrimp and Corn Bisque hot, garnished with fresh herbs, if desired. Enjoy!
