Description

This Mediterranean Lamb Chops recipe features tender, marinated lamb chops grilled to perfection and served with a vibrant herb sauce made of fresh parsley and mint.


Ingredients

  • 8 pieces lamb chops, approx 2-3 lb
  • ¼ cup olive oil
  • 2 tablespoons garlic, finely chopped
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup fresh parsley
  • ⅓ cup fresh mint leaves
  • 1 whole garlic clove
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a small bowl, combine olive oil, finely chopped garlic, fresh lemon juice, fresh rosemary, fresh thyme, cayenne pepper, salt, and ground black pepper. Mix well to create the marinade.
  2. Pour the marinade over the lamb chops, making sure each piece is thoroughly coated. Cover and let marinate for at least 30 minutes.
  3. Preheat a griddle or grill pan over medium-high heat. Cook the marinated lamb chops for 8 to 10 minutes, turning frequently.
  4. While the lamb cooks, blend fresh parsley, mint leaves, whole garlic clove, fresh lemon juice, salt, ground black pepper, and olive oil in a food processor until smooth.
  5. Place the cooked lamb chops on a serving platter. Drizzle the fresh herb sauce over the top and garnish with additional parsley. Serve with lemon wedges.

  • For deeper flavor, marinate overnight in the refrigerator.
