Description
This Mediterranean Lamb Chops recipe features tender, marinated lamb chops grilled to perfection and served with a vibrant herb sauce made of fresh parsley and mint.

- 8 pieces lamb chops, approx 2-3 lb
- ¼ cup olive oil
- 2 tablespoons garlic, finely chopped
- 1 tablespoon fresh lemon juice
- 2 teaspoons fresh rosemary, chopped
- 1 tablespoon fresh thyme
- ½ teaspoon cayenne pepper
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup fresh parsley
- ⅓ cup fresh mint leaves
- 1 whole garlic clove
- 2 tablespoons fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons olive oil
Instructions
- In a small bowl, combine olive oil, finely chopped garlic, fresh lemon juice, fresh rosemary, fresh thyme, cayenne pepper, salt, and ground black pepper. Mix well to create the marinade.
- Pour the marinade over the lamb chops, making sure each piece is thoroughly coated. Cover and let marinate for at least 30 minutes.
- Preheat a griddle or grill pan over medium-high heat. Cook the marinated lamb chops for 8 to 10 minutes, turning frequently.
- While the lamb cooks, blend fresh parsley, mint leaves, whole garlic clove, fresh lemon juice, salt, ground black pepper, and olive oil in a food processor until smooth.
- Place the cooked lamb chops on a serving platter. Drizzle the fresh herb sauce over the top and garnish with additional parsley. Serve with lemon wedges.
Notes
- For deeper flavor, marinate overnight in the refrigerator.
