Ingredients

- 2 cans Chickpeas (15-ounce, drained and rinsed)
- 8 ounces Feta cheese (diced or crumbled)
- 1/2 cup Red onion (finely diced)
- 1/3 cup Parsley (chopped)
- 3 tablespoons Olive oil
- 3 tablespoons Lemon juice
- 1/2 teaspoon Lemon zest
- 1 tablespoon Honey or maple syrup
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon Black pepper
Instructions
- In a large bowl, combine olive oil, lemon juice, lemon zest, honey or maple syrup, kosher salt, and black pepper. Whisk everything until well blended.
- Toss in the drained chickpeas, diced feta, finely diced red onion, and chopped parsley. Gently stir to coat everything with the dressing.
- Enjoy immediately or refrigerate for a bit to allow flavors to meld.
