Description

A refreshing Lemony Chickpea Feta Salad that’s quick to prepare and packed with flavor, perfect for any lunch occasion.


Ingredients

  • 2 cans Chickpeas (15-ounce, drained and rinsed)
  • 8 ounces Feta cheese (diced or crumbled)
  • 1/2 cup Red onion (finely diced)
  • 1/3 cup Parsley (chopped)
  • 3 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 1/2 teaspoon Lemon zest
  • 1 tablespoon Honey or maple syrup
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper

Instructions

  1. In a large bowl, combine olive oil, lemon juice, lemon zest, honey or maple syrup, kosher salt, and black pepper. Whisk everything until well blended.
  2. Toss in the drained chickpeas, diced feta, finely diced red onion, and chopped parsley. Gently stir to coat everything with the dressing.
  3. Enjoy immediately or refrigerate for a bit to allow flavors to meld.
