Ingredients

  • 1 pound Boneless chicken thighs
  • 4 tablespoons Butter
  • 1 cup Tomato puree
  • 1 cup Heavy cream
  • 1 tablespoon Ginger-garlic paste
  • 1 tablespoon Garam masala
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 cup Basmati rice
  • 2 cups Water
  • 1 piece Bay leaf
  • 1 teaspoon Salt
  • 1 tablespoon Ghee or butter

Instructions

  1. Melt butter in a large skillet over medium heat until foamy and golden, about 1 minute.
  2. Add ginger-garlic paste and sauté until fragrant and slightly golden, about 30 seconds.
  3. Stir in garam masala, turmeric, and red chili powder; cook until fragrant, about 20 seconds.
  4. Pour in tomato puree, bring to a gentle simmer, and cook for 5 minutes.
  5. Add chicken thighs, season with salt, cover, and simmer until cooked through, about 15–20 minutes.
  6. Stir in heavy cream, simmer for 2–3 minutes until velvety.
  7. Rinse basmati rice under cold water until it runs clear.
  8. Combine rice, water, bay leaf, salt, and ghee in a pot; bring to a boil, cover, and simmer on low for 15 minutes.
  9. Remove from heat, let stand 5 minutes, discard bay leaf, and fluff with a fork.
