- 1 pound Boneless chicken thighs
- 4 tablespoons Butter
- 1 cup Tomato puree
- 1 cup Heavy cream
- 1 tablespoon Ginger-garlic paste
- 1 tablespoon Garam masala
- 1 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- 1 teaspoon Salt
- 1 cup Basmati rice
- 2 cups Water
- 1 piece Bay leaf
- 1 teaspoon Salt
- 1 tablespoon Ghee or butter
Instructions
- Melt butter in a large skillet over medium heat until foamy and golden, about 1 minute.
- Add ginger-garlic paste and sauté until fragrant and slightly golden, about 30 seconds.
- Stir in garam masala, turmeric, and red chili powder; cook until fragrant, about 20 seconds.
- Pour in tomato puree, bring to a gentle simmer, and cook for 5 minutes.
- Add chicken thighs, season with salt, cover, and simmer until cooked through, about 15–20 minutes.
- Stir in heavy cream, simmer for 2–3 minutes until velvety.
- Rinse basmati rice under cold water until it runs clear.
- Combine rice, water, bay leaf, salt, and ghee in a pot; bring to a boil, cover, and simmer on low for 15 minutes.
- Remove from heat, let stand 5 minutes, discard bay leaf, and fluff with a fork.
Notes
- Optional: sprinkle chopped cilantro for fresh color after serving.
