- 1/2 cup full fat Greek yogurt
- 1/4 cup powdered peanut butter (such as PB Fit or PB2)
- 1 tablespoon creamy peanut butter
- 1/2 tablespoon maple syrup
- 1/2 cup dark chocolate chips (such as Lily’s)
- 1 teaspoon coconut oil
- Flaky sea salt (optional, for topping)
Instructions
- In a mixing bowl, combine the Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Stir thoroughly until you achieve a smooth, well-combined mixture ensuring all ingredients are evenly distributed.
- Line a plate or small baking tray with parchment paper. Using a medium cookie scoop or spoon, scoop the yogurt mixture onto the prepared surface making evenly sized portions. The recipe yields about 6 bites. Place them in the freezer for 10-20 minutes or until they become solid to the touch.
- While the bites freeze, melt the dark chocolate chips with the coconut oil. Use either a microwave or a double boiler method, stirring frequently until the mixture is smooth and liquid.
- Once the yogurt bites are solid, dip each one into the melted chocolate until fully coated. If desired, sprinkle flaky sea salt on top before the chocolate sets to add a savory touch. Place the coated bites in the refrigerator to allow the chocolate to harden completely.
- After the chocolate coating has fully set, the bites are ready to enjoy. Store any leftovers in the refrigerator for 3-4 days to maintain freshness.
