Description

These High Protein Frozen Peanut Butter Greek Yogurt Bites are a delicious and nutritious snack perfect for satisfying your sweet tooth while keeping you fueled.

Ingredients

Scale
  • 1/2 cup full fat Greek yogurt
  • 1/4 cup powdered peanut butter (such as PB Fit or PB2)
  • 1 tablespoon creamy peanut butter
  • 1/2 tablespoon maple syrup
  • 1/2 cup dark chocolate chips (such as Lily’s)
  • 1 teaspoon coconut oil
  • Flaky sea salt (optional, for topping)

Instructions

  1. In a mixing bowl, combine the Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Stir thoroughly until you achieve a smooth, well-combined mixture ensuring all ingredients are evenly distributed.
  2. Line a plate or small baking tray with parchment paper. Using a medium cookie scoop or spoon, scoop the yogurt mixture onto the prepared surface making evenly sized portions. The recipe yields about 6 bites. Place them in the freezer for 10-20 minutes or until they become solid to the touch.
  3. While the bites freeze, melt the dark chocolate chips with the coconut oil. Use either a microwave or a double boiler method, stirring frequently until the mixture is smooth and liquid.
  4. Once the yogurt bites are solid, dip each one into the melted chocolate until fully coated. If desired, sprinkle flaky sea salt on top before the chocolate sets to add a savory touch. Place the coated bites in the refrigerator to allow the chocolate to harden completely.
  5. After the chocolate coating has fully set, the bites are ready to enjoy. Store any leftovers in the refrigerator for 3-4 days to maintain freshness.

Notes

  • These bites are great for a quick snack or a healthy dessert.
  • Adjust the sweetness by adding more or less maple syrup.
