  • 4 cups broth (chicken, turkey, or vegetable)

Instructions

  1. Chop the sweet potatoes and onion into small, even pieces.
  2. Heat oil in a large stockpot over medium heat. Add ground turkey and brown for 5-7 minutes.
  3. Add chopped onion, kosher salt, black pepper, cumin, coriander, and paprika. Cook for 3-4 minutes until onion softens.
  4. Stir in white rice and sweet potatoes, cooking for 1 minute.
  5. Pour in broth and stir to combine. Bring to a boil, then partially cover and simmer gently.
  6. Reduce heat and simmer for about 15 minutes, or until sweet potatoes are tender.
  7. If the soup is too thick, add more broth to reach desired consistency. Taste and season as needed.
