Description
A hearty and comforting Hobo Casserole featuring layers of seasoned ground beef, thinly sliced potatoes, creamy mushroom and chicken soups, and melted cheese, baked to perfection.

- 1 lb ground beef
- 1 cup onion, diced
- 1 tbsp garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 5 medium potatoes, thinly sliced
- 1 can condensed cream of mushroom soup
- 1 can condensed cream of chicken soup
- 1 can evaporated milk
- ½ cup milk
- 2 cups shredded cheese
- Cooking spray
Instructions
- Heat the oven to 375°F (190°C). Spray a 9×13 inch baking pan with cooking spray.
- In a large skillet, cook the ground beef, diced onions, and minced garlic over medium heat until the beef is no longer pink. Drain excess fat and season with salt and black pepper.
- Arrange a layer of thinly sliced potatoes over the bottom of the prepared pan. Spread half of the cooked beef mixture evenly over the potatoes.
- In a bowl, whisk together the soups and milks until smooth. Pour half of this mixture over the beef layer. Sprinkle half of the shredded cheese on top.
- Repeat the layering process with the remaining potatoes, beef, soup mixture, and shredded cheese.
- Tent a piece of aluminum foil loosely over the pan. Bake for 1 hour.
- Remove the foil and continue baking for an additional 30 minutes.
- Let it stand for 10 minutes before slicing. Serve warm.
