Description

A vibrant and flavorful Halloween Bean Dip that’s quick to make, perfect for parties. This easy dip combines black beans with zesty lime, crunchy bell peppers, and a hint of jalapeño heat, making it a festive and delicious appetizer.

Ingredients

Scale
  • 29 ounce can black beans, rinsed and drained
  • 3/4 cup Ro-Tel Original, drained
  • 1/3 cup red onion, finely diced
  • 1 orange bell pepper, diced
  • 1 jalapeno, seeded and minced
  • 1/3 cup cilantro, chopped
  • 1 large clove garlic, minced
  • 1 lime, zested and juiced
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Blue corn tortilla chips, for serving

Instructions

  1. Combine Ingredients: In a large bowl, add the rinsed and drained black beans, drained Ro-Tel, finely diced red onion, diced orange bell pepper, minced jalapeno, chopped cilantro, minced garlic, and the zest and juice of one lime. Toss all these ingredients together to integrate the flavors.
  2. Season: Sprinkle 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper over the bean mixture. Mix well to ensure even seasoning.
  3. Adjust to Taste: Taste the bean dip and adjust seasonings if needed. You can add extra salt, pepper, lime juice, or even some hot sauce to enhance the flavor profile to your liking.
  4. Serve: Chill if desired, then serve chilled or at room temperature with blue corn tortilla chips for scooping and dipping.

Notes

  • For added creaminess, blend a portion of the mixture before combining with the rest.
  • To make it spicier, include seeds from the jalapeno or add more hot sauce.
  • This dip can be prepared a few hours ahead and refrigerated to allow flavors to meld.
  • Use fresh lime for the best bright citrus flavor rather than bottled juice.
  • Drain the Ro-Tel well to prevent excess moisture in the dip.
