- 150 g unsalted butter
- 200 g dark chocolate (70% cocoa)
- 90 g golden caster sugar
- 3 large eggs
- 90 ml Guinness
- clotted cream or thick double cream (optional)
Instructions
- Prepare the ramekins by buttering four 9 x 5cm ramekins generously.
- Melt the chocolate by combining butter, chopped dark chocolate, and a pinch of salt over simmering water until smooth.
- Mix the batter by beating together golden caster sugar and eggs until pale, fluffy, and thick.
- Combine melted chocolate and Guinness into the egg mixture. Spoon into ramekins and chill in the fridge for 1 hour.
- Preheat the oven to 200°C/180°C fan/gas 6. Bake the puddings for 18 minutes until they rise and crack slightly.
- Serve warm with a dollop of clotted cream or thick double cream.
