Ingredients

  • 150 g unsalted butter
  • 200 g dark chocolate (70% cocoa)
  • 90 g golden caster sugar
  • 3 large eggs
  • 90 ml Guinness
  • clotted cream or thick double cream (optional)

Instructions

  1. Prepare the ramekins by buttering four 9 x 5cm ramekins generously.
  2. Melt the chocolate by combining butter, chopped dark chocolate, and a pinch of salt over simmering water until smooth.
  3. Mix the batter by beating together golden caster sugar and eggs until pale, fluffy, and thick.
  4. Combine melted chocolate and Guinness into the egg mixture. Spoon into ramekins and chill in the fridge for 1 hour.
  5. Preheat the oven to 200°C/180°C fan/gas 6. Bake the puddings for 18 minutes until they rise and crack slightly.
  6. Serve warm with a dollop of clotted cream or thick double cream.
