- 2 Eggs
- 2 tbsp Melted butter or coconut oil
- 1 tsp Vanilla extract
- 1 1/2 cups All-purpose flour (or whole wheat)
- 2 tbsp Sugar (optional)
- 2 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Salt
Instructions
- Heat your waffle iron to medium-high.
- In a large bowl, whisk together Greek yogurt, eggs, melted butter, and vanilla until smooth.
- In a separate bowl, combine flour, sugar, baking powder, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Let the batter rest for 5 minutes.
- Lightly spray or brush your waffle iron with oil.
- Pour about ½ cup of batter onto the center of the hot iron and close the lid.
- Cook for 3-4 minutes until the waffle stops steaming and turns golden brown.
- Carefully remove the waffle and place it on a wire rack.
- Top your warm waffles with your favorite toppings and serve immediately.
