Ingredients

  • 2 Eggs
  • 2 tbsp Melted butter or coconut oil
  • 1 tsp Vanilla extract
  • 1 1/2 cups All-purpose flour (or whole wheat)
  • 2 tbsp Sugar (optional)
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt

Instructions

  1. Heat your waffle iron to medium-high.
  2. In a large bowl, whisk together Greek yogurt, eggs, melted butter, and vanilla until smooth.
  3. In a separate bowl, combine flour, sugar, baking powder, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Let the batter rest for 5 minutes.
  5. Lightly spray or brush your waffle iron with oil.
  6. Pour about ½ cup of batter onto the center of the hot iron and close the lid.
  7. Cook for 3-4 minutes until the waffle stops steaming and turns golden brown.
  8. Carefully remove the waffle and place it on a wire rack.
  9. Top your warm waffles with your favorite toppings and serve immediately.

  • Cool waffles on a wire rack to keep them crispy.
