Ingredients

- 2 medium sweet potatoes
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and bake for 45 minutes or until tender.
- Let the sweet potatoes cool, then peel and mash them in a bowl.
- Add almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper to the mashed sweet potatoes and mix well.
- Form the mixture into small bite-sized balls and place them on a baking sheet lined with parchment paper.
- Drizzle olive oil over the bites and bake for 20 minutes or until golden brown.
- Garnish with fresh herbs if desired and serve warm.
