Description

A delicious and healthy appetizer made with sweet potatoes, perfect for gluten-free diets.


Ingredients

Scale
  • 2 medium sweet potatoes
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45 minutes or until tender.
  3. Let the sweet potatoes cool, then peel and mash them in a bowl.
  4. Add almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper to the mashed sweet potatoes and mix well.
  5. Form the mixture into small bite-sized balls and place them on a baking sheet lined with parchment paper.
  6. Drizzle olive oil over the bites and bake for 20 minutes or until golden brown.
  7. Garnish with fresh herbs if desired and serve warm.
