  • 3 tablespoons unsalted butter (softened)
  • 1½ cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together 2¼ cups flour, 2 teaspoons ground ginger, 1 teaspoon cinnamon, ½ teaspoon ground cloves, ½ teaspoon baking soda, and ¼ teaspoon salt until well combined.
  2. In a separate bowl, cream ¾ cup softened unsalted butter and 1 cup packed brown sugar until light and fluffy. Then beat in ¼ cup molasses and 1 large egg until the mixture is smooth and well incorporated.
  3. Gradually add the dry ingredient mixture to the wet ingredients, mixing until combined and forming a soft dough.
  4. Cover the dough with plastic wrap and refrigerate for 30 minutes to firm up.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop the dough into 1-inch balls, roll each ball in ¼ cup granulated sugar, then place them about 2 inches apart on the prepared baking sheets.
  7. Bake for 9 to 10 minutes, or until the tops crack slightly and the edges are just set. Remove from oven and allow to cool completely.
  8. Beat 4 ounces softened cream cheese and 3 tablespoons softened unsalted butter together until creamy and smooth.
  9. Gradually add 1½ cups powdered sugar and ½ teaspoon vanilla extract to the cream cheese mixture, beating until fluffy and smooth.
  10. Spread about 1 tablespoon of the filling on the flat side of one cookie, then top with another cookie to create a sandwich.
