Description

These Frozen Yogurt Granola Cups are a delicious and healthy no-bake treat perfect for breakfast or a snack. Combining crunchy oats and almond butter with creamy Greek yogurt and fresh berries, these cups are easy to make and freeze beautifully for a refreshing, wholesome dessert or snack.


Ingredients

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey (depending on desired sweetness)
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt (preferably full-fat or 2% for creaminess)
  • Berries of choice to top (such as blueberries, raspberries, or strawberries)

Instructions

  1. In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until the mixture forms a sticky dough. If the dough feels too dry or crumbly, add a little more almond butter and honey to reach the right consistency for pressing.
  2. Line a muffin pan with muffin liners. Take a spoonful of the granola dough and press it firmly into the bottom of each muffin cup to create a sturdy base. Make sure the base is compact so it holds together well when frozen.
  3. Spoon about a tablespoon or more of Greek yogurt into each granola base, spreading it evenly over the pressed granola layer.
  4. Place your choice of fresh berries on top of the yogurt in each cup. Sprinkle any leftover granola dough on top for added crunch and texture.
  5. Place the muffin pan in the freezer and allow the cups to set for at least 4 hours to firm up fully.
  6. Before serving, let the frozen cups thaw for a few minutes at room temperature to make them easier to eat and bring out the flavors.
