Instructions

  1. Heat butter and olive oil in a large skillet over medium-low heat.
  2. Add sliced onions, salt, and pepper. Cook slowly for 25-30 minutes, stirring occasionally, until deep golden brown and sweet.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Pour in white wine, scraping browned bits from the pan.
  5. Add beef broth and thyme. Simmer for 5 minutes.
  6. Meanwhile, cook pasta according to package directions until al dente. Drain, reserving 1 cup pasta water.
  7. Add heavy cream to the onion mixture and simmer for 3-4 minutes until slightly thickened.
  8. Gradually stir in Gruyère and Parmesan cheeses until melted and smooth.
  9. Add cooked pasta to the sauce, tossing to coat. Add reserved pasta water as needed for consistency.
  10. Stir in fresh parsley. Serve immediately, topped with extra cheese.
